“We met the buyers of Whole Foods in March at Expo West. On the spot they said, let's launch it in a few months. Let's plan for August. August turned to December. Then: the certification of your factory is not a certification that Whole Foods is accepting. One of your ingredients is a new ingredient for Whole Foods, you're using mycoprotein, we need to approve it. It was very stressful along the way.” — Ofek Ron, Protein Production Technology Podcast

“The larger the chain gets, your ability to do things is limited, because they have thousands of products in hundreds of stores. Doing a demo is one of the most expensive things. You pay $200 for a one-time demo of three hours. Now you do it in 100 stores, it's 20K for one day. You won't be able to do it. So you try to be creative: you bring an influencer, you partner with the chain. And in the end, the product needs to sell.” — Ofek Ron, Protein Production Technology Podcast

“The most hunted animal in the world is fish. When you eat a fish, you sometimes eat the whole fish; if you eat sardines, you eat many fish. And I looked at the market: 70 to 80 percent of the people that are eating fish are not eating fish burgers. They're eating it in the natural form, whether it's a fillet or they're buying the full fish and cutting it at home. No one is tackling that problem, the 70 to 80 percent market potential.” — Ofek Ron, Protein Production Technology Podcast

“We started a company thinking we will be a 3D printing company. We were developing this machine for three months when we had not a lot of money. A minute before we pressed the button to make it happen, one engineer came with another idea. He said this thing's not going to work, and he had the idea of building the fish layer by layer. Instead of producing a nozzle machine, we produced a forming machine.” — Ofek Ron, Protein Production Technology Podcast

“When we tried to scale up the machine and started to make it more automated and complicated, we should just have taken what we did and tweaked it a bit and another bit, and not tried to restructure the whole thing and make something completely different that should do 10x in production. Doing it in smaller steps, but faster steps, and trying to do the simplest thing is what I will take. Simplify, simplify, simplify.” — Ofek Ron, Protein Production Technology Podcast

“The plan is to take the cost down from around $6 to around $2 per fillet. And the way we're doing it is not a very sophisticated way. We just put more machines, and the people that are working in Brazil don't get the same salary as the people that are working in California. Most of the cost comes from the shift cost, which is the people cost.” — Ofek Ron, Protein Production Technology Podcast

“I think we're not in a protein problem, and people are just buying things filled with protein like crazy. We should be more focused on whole meals. If you go to a conference, you see everything protein. Relax. It's good to have protein, but it's not the only issue. The issue is not that people are not having enough protein. The issue is people eating not healthy.” — Ofek Ron, Protein Production Technology Podcast

“I thought that I'll come up with a new plant-based fish, and a fish lover will come taste it, and if it's cheaper, they'll change. Big mistake, unfortunately. I found out that we're a very interesting product to people that are already vegans and vegetarians. We look at who buys the product, who goes to the restaurants: mainly people who are already familiar, they eat Beyond Meat, they eat Impossible.” — Ofek Ron, Protein Production Technology Podcast

“I thought that by getting the smartest people in the room to work for you, you will solve the most difficult problem. And I found out that it's not about how smart you are, it's about the discipline. If you have employees who might have only a first degree in food science, but they have the discipline to try again and again and to learn, and they have more practical experience, they can deliver even better than the top-talent PhDs that you have in your country.” — Ofek Ron, Protein Production Technology Podcast

“We've been 30 people in Oshi, now we're 15. When we were 30, we were in maybe 10 to 20 restaurants. Now we're in hundreds of stores and restaurants across the U.S. Sometimes getting more people slows things down rather than the opposite. Before you hire, give the team a chance to adjust. I was hoping that if it was 100% without a person, it would be 90%. But what happened is they did 120% when you took someone out. They don't need more people. They need more efficiency, less conference calls, and more empowerment to get things done without needing your permission.” — Ofek Ron, Protein Production Technology Podcast

“Every day, I'm waking up and I'm still fighting the fight, but since we started the company till this day, I'm thinking to myself, most of the chances we will fail. The reason I'm still here is because there is a chance we will not. I never said to myself, most of the chances we will win. And I'm still not there. Every morning I'm saying most of the chances we won't make it, and in order to make it, we need to do a lot of things. And that's what's driving me to do those things.” — Ofek Ron, Protein Production Technology Podcast

“About 87 point something percent of the money now goes to AI. If I'm going to VCs now, I am from the about 10% that are trying to get their money, which we're not an AI. We're a food company. We have those margin constraints. We're not as fast in scale as software and other things that don't need to have food safety, physical things, regulation. So it's becoming almost impossible to raise money from VCs these days in the category of food.” — Ofek Ron, Protein Production Technology Podcast
